I am a vegetarian and DH is not. He likes to have meat each night with dinner. Has anyone in this situation figured out how to prepare easy healthy meals for a family like ours. We have one child and he eats meat.

What about making pasta with a sauce you like and just sauteing some chicken breast strips to put on top of theirs?
For example, this is yummy: http://www.foodnetwork.com/recipes/rachael-ray/chicken-with-wild-mushroom-and-balsamic-cream-sauce-recipe/index.html I use dry sherry instead of balsamic, and you can obviously sub veggie broth. Then add the chicken after you serve yourself: |
That would be my suggestion, too...things like tacos, burritos, pasta, chili that would lend themselves to having meat added on top.
Homemade pizza - totally customizable
I agree with the other posters, make what you would normally make that is vegetarian. Get a grill pan--I have a square LeCruset pan with the enamel. Buy cuts of meat that work for stove top grilling--chicken breasts, fish filets, lamb chops, steak. Very quick.
Red beans and rice - DH then adds sausage to his, I do not (or I add veggie "meatballs").
I've made lasagna before with veggies throughout and then done meat only on one side - you just have to mark which side it is
