I would highly recommend a trip to farm b&b's in PA. We stayed at two in Lancaster County. They're great for education and fun at the same time.
Also, there are some in NJ if you're willing to drive a bit more.

One was Rocky Acres Farm, Mt Joy, PA. It is online. It is a working farm where kids can see cows give birth, feed calves, collect eggs, wade in the creek, and play with kittens (lots). It was quite comfortable. The only draw back is that because it is a working farm, you have to be alert. Not a place for out of control kids, or toddlers.
The other is called Green Acres Farm, Mt. Joy, PA, also online. It is a bit more toddler friendly, safer, but less going on. The breakfast is not as elaborate as at Rocky Acres, and the rooms are not as nice. But it would be a better choice if your kids are under 3. That owner told me that the home schoolers come off season, with prepared projects.
The area also has numerous Amish farms, and you can have dinners (pre-arranged) with the Amish, which is good. Also there is Strasburg Railroad and some amusement parks.
