If it's a recipe calling for rice mixed with a bunch of other stuff, I think it's doable. I've actually swapped quinoa for rice entirely in our dinners - quicker, tastes better, and healthier. The size and texture are different enough that I wouldn't do this in a rice-heavy recipe without testing it first, though.
Are you allergic to corn as well? My favorite stuffing is cornbread based. |

I would imagine that the texture would be pretty off if you use quinoa. Why don't you try a cauliflower and mushroom stuffing?

| Conceivably, you could make stuffing out of sawdust. That doesn't make it a good idea. Go with a vegetable option. |

I take it back. Williams Sonoma Thanksgiving catalog features a quinoa and red rice stuffing mix. I know OP can't have rice but apparently quinoa can be stuffing. For only $13 a serving. |
