Can you make apple pie filling in advance and refrigerate until ready to bake pie?

I want to make an apple pie tonight but won't have time to chop apples, etc. late this afternoon. I will have time during my toddler's nap though. Can I chop the apples, mix with lemon & sugar, and leave them in the fridge till dinnertime, then assemble the pie and bake?

Of course you can.

They will release a lot of juice while they're sitting, maybe heat up the filling on the stove and thicken it up before baking in the crust.

OP here. It turned out I didn't have time to do it earlier anyway, so no pie tonight. Another day. Thanks for the tip about thickening before baking.

And use OJ instead of lemon juice. You won't need as much sugar in the pie and it will still stop browning.

The apples will turn a little brown. Do you have a tool that peels, cores and slices the apples? I use mine all the time to make apple pies, so quick. It was about $20.
