What Should I Cook?

Anonymous
I'm not sure what I was thinking but Sunday at Whole Foods I bought 3 - 1.95 pound packs of chicken breasts, a 1.5 pound pack of ground chicken breast, and two 1.35 one packs of ground turkey breast. I have no idea what to do with it now. Any ideas? I think tonight I'll use two pounds of the ground to make tacos. Any ideas for the rest?

How many people are you feeding that you need two pounds of meat for tacos??

You can make chicken cutlets or parm out of the breasts. Or you can put them in your slow cooker and make pulled chicken. Google for a recipe. Obviously you could freeze some of it. Or cook all of it and freeze what you don't eat.

Ground chicken I usually make meatballs out of. And ground turkey I usually use for meatloaf.

Why does it matter to you? She can always freeze the extras for another meal. 2lbs doesn't always go very far. Once you cook it up it shrinks.

Fortunately, there's tons of stuff you can do with chicken.

With the turkey - I'd do turkey salsa meatloaf with quinoa.

With the chicken breasts - I'd do balsamic chicken, BBQ chicken, chicken/mushroom and rice, or pulled chicken. Or, I'd make spring rolls. Rice as a side.

I've honestly never bought or used ground chicken. You could probably use that for tacos or meatballs.

Because we are trying to figure out how many meals to turn the rest into.

This is one of my favorite chicken recipes. I always make extra mustard sauce and add a little bit more vinegar to it. It's pretty easy and really yummy UO.
