I am a poster from a recent thread who said that making meals wasn't cheap for us. Some people asked for the recipes, so here they are. They are all vegetarian.
Savory Sweet Potato Wedges (from Martha Stewart) 3 sweet potatoes, peeled and cut into 1 inch wedges 1 garlic clove 1.5 tbs olive oil 1/4 tsp dried thyme 1/8 tsp crushed red pepper 1/4 tsp salt Preheat oven to 400. Toss sweet potatoes with diced garlic, olive oil, and the rest of the spices. We prefer a spicier dish so I use more red pepper. Roast until soft (about 30 mins), or until your taste. Serves 4. Green Beans With Ginger and Tomatoes (from Everyday Food) 1 tbs vegetable oil 2 tbs minced peeled fresh ginger ½ tsp ground coriander (we don’t have any so we use garam masala and turmeric to our tastes) 1 pound trimmed green beans Coarse salt and ground pepper 3 medium tomatoes, cut into ¼ inch wedges 1 tbs fresh lime juice In a large skillet with a tight-fitting lid, heat oil over medium-high. Add ginger and coriander (or garam masala and turmeric) and cook, stirring constantly, until fragrant, about 1 min. Add green beans, season with salt and pepper, and cook, stirring until beans begin to soften (about 5 mins). Add tomatoes and cook, stirring, until tomatoes begin to release their juices, about 3 mins. Add ¼ c up water and cook 4 mins. Uncover, increase heat to high, and cook until liquid is slightly reduced, about 5 mins. Stir in lime juice and season to taste with salt and pepper. Serve warm or at room temp. Serves 4. Spinach and Field Greens Pie (based off a Whole Foods recipe with our own modifications) 1 bag fresh spinach 1 very large tub of field greens or whatever greens you prefer 4 tbs olive oil 1 leek minced 1/2 tsp red pepper flakes ¾ cup crumbled feta (we like to put in a little more) ¾ cup grated pecorino or parmesan (we like a little more) 1 egg ½ cup golden raisins ½ cup pine nuts The original recipe calls for you to make your own crust but we just use a Pillsbury one. Rinse and coarsely chop the greens (I don’t chop but DH does). Heat water in a pot and add half the greens. Cook for 5 mins or until wilted and tender. Stir in remainder of greens. Cook, covered, until all are tender. Drain well, pressing to remove any excess water. Heat 2 tbs olive oil in a large skillet. Add leak and sauté until tender. Add remaining 2 tbs olive oil, greens, and red pepper flakes. Cook for 3 mins. Remove from heat and cook briefly. Stir in feta cheese, pecorino or Parmesan cheese, egg, raisins, and pine nuts. Season with salt and pepper. Put in pie crust and bake for 30-45 mins. Enjoy! |

| They didn't. If you read the other post, you see I'm referencing some additional, different meals as well, which altogether did cost $65. |
