| I am trying to eat more and more salads for lunch. However, I am having a hard time finding new tasty (and hopefully easy) salads to bring into work each day. Does anyone have any good salad "recipes" or links to some? Also, if you add chicken to your salads, how do you cook it (grill, bake, etc.)? Thanks! |
| I eat a salad every day but switch up the protein. So if I have leftover (baked or grilled) chicken in the house, I chop it up and add it. If not I sometimes use edamame, sliced turkey, or imitation crab. |
| I do salad "bowls" similar to Chipolte's burrito bowls. I bring pre-cooked brown rice (you can buy at the store), heat it up slightly, and then throw on top various combinations of greens, proteins, veggies and fruit, depending on what I have at home. Sometimes I get a few thicker pieces of cooked turkey or roast beef from the WF deli, sometimes I bring a can of tuna, sometimes it is canned beans (kidney or black) or lentils I made. I like to throw on some grapes in the summer, roasted squash and other veggies in the winter. |
