I also really like Columbia
Midwest: Indiana University
South: Vanderbilt (I haven't been to many other universities in the South)
West: Not much experience with beautiful West coast universities, but I visited University of Puget Sound when I was a kid because a relative worked there. From what I remember the campus is sort of an odd architectural mix but it felt very green and lush and you can see Mount Rainier and you're near the ocean. That said, it's been a long time since so it could be my memory improved it by combining everything I saw in Puget Sound with my memory of the university.

I thought the Vanderbilt campus was atrocious.

The education school across the street is nice, but the main campus really is pretty bland. The big hospital in the midst of it doesn’t help.

Duke, Stanford, Pepperdine, West Point

Even if the buildings are ugly, I'm a fan of most small New England schools in the fall when the leaves are changing. That truly feels like college to me.
