Chicken Dish

One of my go to meals is an easy parmesan chicken. I can make it ahead and it takes no time. Does anyone have any other good chicken recipes? Preferably a dish for the oven. Not too many ingredients, not too fussy and easy to make ahead and stick in the fridge for the rest of the day. I have four young kids so trying to please everyone!TIA!

There's a recipe on the label of Patak's Major Grey Chutney. I think it's almost the whole jar plus a few tsps of dijon mustard. You spread it over chicken and bake. I use skinless thighs, but breasts would work, too. Be sure to line your pan with foil for easy clean up. My toddler loves it. I usually serve it with rice and cauliflower.

This is another great recipe, though a little more work. It's from Gourmet, but the recipe isn't online anymore. You can adjust the spice and garlic as you'd like. I've tried a bunch of hoisin sauces and Lee Kum Kee is our favorite. I bake it at 500 and warm up whatever sauce I don't put on the chicken and use it as a sauce. Great with rice and broccoli.

1 bottle hoisin sauce
2 teaspoons finely grated peeled fresh ginger
8 garlic cloves, minced
1/2 teaspoon dried hot red pepper flakes
1 teaspoon Asian sesame oil
2 tablespoon soy sauce
2 tablespoon rice vinegar (not seasoned)

My other favorite is a bbq rub. It's a lot of measuring but it makes several dinners worth. I leave out the cayenne, oregano, and some of the white sugar.

2 tablespoons smoky Spanish paprika
2 tablespoons kosher salt
3 tablespoons sugar
2 tablespoons brown sugar
1 tablespoon cumin
1 tablespoon chile powder
1 tablespoon freshly ground black pepper
1/2 tablespoon cayenne pepper
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon celery salt
1 teaspoon oregano, crushed
