| I have a bumper crop of tomatos. I'm looking for some good recipes, please share! |
| my favorite now is really basic...tomato, fresh mozzarella and basil. drizzle with olive oil and balsamic (not necessary). |

Here you go...I have 2 great ones.....
In Egypt we cut up the tomatoes and add cumin and course salt, mix it together and it goes with EVERYTHING... on rice, with fish, shrimp, etc. ROASTED TOMATO SOUP - EASY, FAST, LITTLE FUSS Ingredients: Tomatoes, onions, garlic, heavy whipping cream or 1/2 and 1/2, bay leaves, olive oil, course salt, fresh pepper and if you like add some good quality chicken base to it. You will need most of your tomatoes for this one... Cut them into quarters and place in large oven pan Cut at LEAST 4-5 large sweet vidalia onions in quarters - place in pan Place a large handful of garlic cloves with them Add 5-8 bay leaves Liberally sprinkle good quality olive oil, fresh pepper and course salt - the course or kosher salt really brings out flavor Mix it all well, and spread out over pan, place in over on 375 for about an 1 - 1 1/2 hours. Until you see it a nice collection of juices, onions translucent, etc. Take out of oven, place in large pot, remove bay leaves, Using hand held blender (this is a great invention), smooth out your tomato mixture while slowly adding heavy whipping cream or 1/2 and 1/2. How much you add depends on how you like it. You may ALWAYS use your chicken base to create a good stock and cut back a little on the cream. At this point your set and just salt and pepper to your taste. voila! Also, with this recipe I usually cut up day old artisnal bread, toss it around in olive oil, and parmesan, some course salt and fresh pepper and stick in in the oven for a few minutes to create some croutons. Awesome salsa recipe--we've made it every week since I found it. It just fits in my 7 cup Cuisinart food processor. Seriously, I am never buying salsa at the store again. |

actually for the ingredients I meant to write heavy whipping cream OR 1/2 and 1/2
whatever you got, I just wouldn't use regular milk...really takes away from the richness and complexity of the soup. |

I have a couple of great ones!
Panzanella Cut stale french bread into 1/2" cubes and toss with melted butter, olive oil, and minced garlic. Spread on a baking sheet and bake at 375 until golden and crisp (about 20 minutes). Toss bread with fresh cut tomatoes, basil, olive oil, balsamic vinegar, and salt and pepper. Roasted Tomato Pasta Dice tomatoes and toss with a bit of olive oil, garlic, Italian herbs, and salt and pepper. Bake until juicy and roasted 9about 10-15 minutes), then toss with cooked pasta, a bit of pasta water, fresh mozzarella, and fresh basil. |
