DD loves those Dr Praeger spinach pancakes. I'd like to make my own so that I can cut out the sodium b/c she eats at least one a day. Does anyone have any good (easy) recipes that would be similar? I'm not enough of a cook to wing it without a recipe, and the ones I found online seemed sort of complicated, were better suited for adults, or involved frying the pancake.

I don't know the pancakes you are referring to, but I put spinach in pretty much everything for my DS. I can't imagine it's much different than adding blueberries. I would chop finely (or use frozen chopped) and sautee the spinach in a little butter. Then add to the batter and make like normal. Make sure you let us know what worked/how it went.

If you look up any potato pancake recipe, and substitute spinach for potato, you will have a similar pancake. Fry it up. This is not really health food because it is fried in a lot of oil. You can bake it in the oven but it won't taste as oily good as the ones your kids have been eating.

| My son loves those too- not sure how to mimic the recipe- but I have noticed that he will eat a quiche or fritatta of similar consistency, even though he doesn't love eggs. If I put a ton of spinach in it, it seems to be close. And judging by his breath after he eats a Dr. P's patty, they're also full of onion! |
