Any ideas for easy gluten free/lactose free recipes using chicken cutlets?

You could pound the chicken and use a gluten free flour it to make Chicken Piccata or Marsala. I'm sorry I don't have a recipe handy but both are pretty easy. Serve with a green veggie and you are good to go.

Chicken Adobo
Serves 2
2 boneless chicken breasts
1 tablespoon vegetable oil
1 large onion, chopped
2 cloves garlic, minced
3 tablespoons white or apple cider vinegar (or combo of the two)
1/4 cup gluten free soy sauce (kikkoman makes it)
1/2 cup water
3 tablespoons honey
2 bay leafs
1/2 teaspoon paprika
1/4 teaspoon freshly ground black pepper
1. Combine marinade ingredients in bowl, mix well. Marinate chicken if time (overnight, 2-3 hours, whatever)
2. Bake at 325 for 40 minutes.
