| I've got a vegetarian husband and a 2-year-old boy. Both of us are average cooks with little time on our hands. Any suggestions of easy meals to bring to the swimming pool for weeknight dinners after work? I'm thinking something like pasta salad, but the ones I make always taste horrible. We cannot go on ordering pizzas all the time--it's breaking my diet and our budget. |

Great Q! We are not vegetarians so we rely on grilling + salads. Or sandwiches for ultra-easy.
But if you can make ahead, chana chaat--Indian chickpea salad--is super-yummy. |
| For small pool meals for a veggie -- mix up some hummus in advance and bring some pita chips or mix up some guacamole and bring some chips. Assemble veggies in a plastic tub and mix up a nice low cal yoggie dip |

For pool meals, we have plastic plates and cups and we leave utensils in the outside pocket of our cooler.
Some of what we make: Green salad Pasta salad Rice or other grain salads (tabouli etc.) Spanish tortilla (potato omelette), whic can be eaten cold Baguette with ham and cheese Cut-up fruit Hummous, baba ganoush, and pita or flatbread served with stuffed grape leaves |
