Food, Cooking, and Restaurants
| I am looking for relatively simple dinner ideas for our upcoming week at the beach. We have a grill and full kitchen. We will be a group of 10. Would love some new ideas to get me out of a rut. TIA! |
|
Caribbean Jerk chicken wraps. We buy low-carb whole wheat wraps, but you can get whatever flavor wrap you like. We dice up the chicken and marinate it in Lawry's Caribbean Jerk marinade sauce. Then we cook it up until it is done. Scoop the chicken onto the wrap, add some cooked brown rice, black beans, and diced pineapple. Extra sauce if you like them spicy. Wrap them up like a burrito and cook in the oven until heated through.

| Fish tacos. Grill some fish and serve with tortillas, red cabbage slaw, cumin sour cream, fresh salsa, avocado. Side dish can be sauteed corn. |
|
Pulled pork or beef barbecue. You can make a giant batch and let everyone make their own sandwiches. Cole slaw is pretty a pretty quick side, if you have food processor.
Marinate chicken breasts and cook two meals' worth on the grill. One meal can be with rice and vegetable, another one a big chicken ceasar salad. |
| Make-your-own tacos is always popular with our crowd. You can do both ground beef and pulled chicken. Leftovers go into a taco salad or nachos. |
|
ABC sandwiches. Get some fresh ciabatta rolls. Cut open and coat with honey mustard. Add cooked bacon and cheddar cheese. Toast in oven. Pull out, add sliced granny smith apples.
Soooooo good! |
| OP here - these ideas are great, thank you! |

Just made Ina Garten's Baked Shrimp Scampi at our beach vacation and it was a huge hit. Kind of labor intensive, but not hard. I served it with roasted potatoes and green beans and a caesar salad. Delicious! Here is the recipe:
