make ahead quesadillas?

I want to make a huge batch of quesadillas for a party - due to timing issues, I would need to make them several hours ahead of time and could not reheat them before serving - is this a bad idea?

I wouldn't want to eat old quesadillas at a party.

you could certainly form them ahead of time and then just throw them on the grill or whatever you planned. IT take about a minute per quesadilla for me. I do this often for weeknight dinners. I put all of the quesadillas together the night before and wrap eachone tightly in plastic wrap and leave them in the fridge.

I would not, however, fully cook and then try to reheat. They will very likely be soggy.

Not a good idea. But I make quesadillas in the toaster oven so you could prep them ahead of time, lay them out on cookie sheets and bake them in the oven right before serving. You should be able to fit a lot on two oven racks.

OP, you could assemble ahead on baking sheets and cook all in the oven immediately before guests arrive (or stagger cook them so that there are a couple of batches of hot food). I often cook multiple quesadillas in the oven-just be sure to oil the tortillas well and watch them closely at the end. I think I usually do about 10-15 min in a 400 degree oven. Try making a test quesadilla to figure out how long it takes in your oven.
