induction cooktop feedback?

We are interested in getting an induction cooktop. How does it compared to regular gas or to electric? Thank you for your feedback.

I love ours, although I was skeptical at first (contractor installed it without asking!) It heats much more evenly, boils water a lot faster and the stovetop itself heats up and cools down very quickly. The only downside is that only certain pots and pans will work with it (the simple test is whether a magnet will stick), so I had to replace a bunch of good pans. My Calphalon wouldn't work, for example, nor our ceramic fondue pot!

LOVE IT!

There is NO comparison with a traditional electic cooktop, and I find my induction cooktop to be more responsive than gas in terms of adjusting the temperature. It heats extremely quickly and I like that the surface itself does not generate any heat because there is no heating element. So you (or a child) can't accidentally turn on the wrong burner and get burned. If you turn it on and there is not a conductive piece of cookware on it, no heat is generated and it turns off after a few seconds. You can turn it on and put your hand on it and it won't get hot.

You do have to test all your cookware with magnets to see if it works. And like PP, I did have to give up a bunch of my good Calphalon.

Induction cooktops are expensive compared to traditional electric cooktops but well worth it if you cook a lot and don't want to stand around for 15 minutes waiting for a big pot of water to boil. Also, I am not sure about the power requirements for it but I know when we did our remodel, the contractor put the cooktop on a separate circuit-breaker by itself.

NP here- thanks and hoping for more please, including brand/model recs. We're about to launch a remodel of a very small kitchen and are probably going with an induction cooktop for space reasons rather than replace our current gas range. Honestly (as someone with the world's ugliest kitchen right now) I'm torn in part because I don't love the look of a black smoothtop. But everyone raves about them, and for us the fact that it actually is functional space on the countertop is a big plus given our space constraints.
