| I have some glucose intolerance, and I am looking for recipes on cakes or muffins with a decent amount of protein (if this is even possible). Thanks! |

I do all my baking with spelt flour, or whole wheat pastry flour. I also generally use greek yogurt instead of oil. While not as fluffy as white bread baking, the results are usually hearty, chewy muffins. Is this what you mean by high-protein?
Here is an example of a receipe online: http://www.fannetasticfood.com/recipes/apple-walnut-crunch-spelt-muffins/ . The blogger is young but used to live in DC and a friend of a friend so I got turned onto her blog - she posts pretty healthy baked goods. |
| Google protein balls for one option. I made some this past week with macadamia nuts, walnuts, dates and shredded coConut yummy |
| You can try recipes that include almond flour. |
