Weight Watcher Breakfast and Lunch Ideas

Have seen a few posts recently re: WW so thought I'd post these ideas from my files. Hope they help inspire someone and good luck on your journey!

Sauté chopped veggies (broccoli, peppers, onions, etc) to make an egg white veggie omelet, adding 2% cheese.

1 cup FF vanilla yogurt
1/2 cup fresh berries
1/4-1/2 cup high fiber, high protein cereal

I love the fruit, yogurt and granola for breakfast, but also used to take an apple and chop it up, add it to 1/2 cup FF cottage cheese, sprinkle with cinnamon and sugar, chill overnight. Your breakfast is ready and waiting when you get up.

Every Thursday is "Egg McMuffin Day" at our house--
1 English muffin, toasted
2 slices Canadian bacon
1 slice 2% American cheese
1 egg, cooked as desired

Another good meat is the Oscar Meyer "Shaved" deli meats--- use in chef salad. Another idea is to make extra chicken when grilling to add to a lunch salad. Cut chicken into bite sized pieces, put on top of salad greens and tomatoes, add some sliced strawberries, and some light Balsamic vinaigrette

Make an omelet with these ingredients
1/4C egg beaters
1 slice WW cheese
Sauté chopped red & green peppers, mushrooms and onions.
Place in wheat tortilla

1/2 cup fat free cottage cheese
(I use 2% Breakstone's)
1 tsp Sugar Free jam
1/2 cup Kashi cereal
1/4 cup fresh fruit cut up (some kind of berries preferably but any kind of fruit you like will do)

Mix jam into cottage cheese. Add cereal (it might help to crush it up a little when stirring) and top off with fresh fruit.

1 large egg
Cooking spray
1 (.6 oz) slice Canadian bacon
1 tsp. Yogurt-based spread
1 (2 oz) light multigrain English muffin, split and toasted
Dash of black pepper
1 (3/4 oz) slice 2% reduced-fat American cheese

Break egg into custard cup or a ramekin; poke several holes in yolk with a wooden pick. Loosely cover custard cup with wax paper. Microwave at medium-low (30%) power 25-30 seconds or until egg is almost set (egg will cook further when sandwich is heated to melt cheese).

Heat a small nonstick skillet over medium-high heat. Coat pan with cooking spray. Add Canadian bacon; cook 1 minute on each side or until lightly browned. Spread yogurt-based spread onto bottom half of English muffin; top with Canadian bacon and egg. Sprinkle pepper over egg; top with cheese and remaining English muffin half. Microwave at high 15 seconds or until cheese melts.

Fruity & Cheesy Open Sandwich
Low fat ricotta
1/4 teaspoon cinnamon
1 teaspoon honey
2 thick slices of fruit bread
1 pear
2 teaspoons of lemon juice
Lightly toast bread slices. Core and slice pear. Mix ricotta, cinnamon and honey. Spread mix on toast. Stack pear slices on toast. Sprinkle lemon juice on top. Cut in half and serve.
