Soba noodle recipes

Does anyone have a good soba noodle recipe? I have one that I love but want to branch out.

OMG This looks wonderful! Thanks for sharing. I am afraid I can't reciprocate with an equally creative recipe. All I do with soba noodles is serve cool with Japanese soba noodle sauce and sprinkled with seaweed and sesame seeds.

OP you probably know this already but 101 cookbooks has NINE soba noodle recipes, including the one you posted. And they all look awesome. I'm now assuming you were interested in ones people have actually tried but am still basking in the glow of 101 cookbooks...lol. So thanks for posting!!

I usually use some variation of toasted sesame oil (must be toasted--the dark kind), soy sauce, ginger, and scallions on cold soba noddles. You can add crushed roasted peanuts for some texture, as well as shredded veggies like cucumbers and carrots. It's a great side to teriyaki chicken/steak (Soy Vey makes an excellent marinade).
