leftover chicken kabobs

Any ideas on how to use up these leftover chunks of chicken?

They are the kabobs from Whole Foods with the peppers and onions, not sure exactly what the marinade was but it was good. I have chopped a few and made a chicken salad (with mayo, celery, onion) and also just chopped them and served atop a green salad. But I still have enough left for another meal (at least). Any other things I can do with them?

cook some brown rice or quinoa and add the chopped chicken and vegetables to the grains. very yummy.

Shred it into tortilla soup or chicken tacos or enchiladas?

Pulled Chicken Sliders. If you don't want buns, the chicken mixture is also great on a salad or pizza.

Depending on the marinade, you can do Greek pitas: I chop up cooked chicken breast, serve in whole wheat pitas with chopped tomatoes and a tzaziki sauce (greek yogurt, chopped cucumber, garlic powder, etc).

Oooh, I think they would work for that, and my husband & daughter LOVE tzaziki! I hope I have time to pick some up on the way home from work.
