Need no salad ideas

Anonymous
My go to winter salad (baby spinach, craisins, pears, and feta) is no longer cutting it and I'm in need of ideas. So please share you favorite salad ingredients. Thanks!

From your title, I thought you didn't need any ideas, and I thought, "How refreshing."

I love mixing greens with cold, cooked beets, hummus, cooked pasta (undressed) and a little vinegrette dressing. The hummus manages to give it more substance (along with a little pasta), but it stays light enough so as not to feel guilt!

Oh I just realized the typo in the subject line and I only wish I didn't need any ideas To the previous poster; how do you cook the beets?

I like to roast vegetables like eggplant, red peppers, onions in olive oil and let cool. Then at lunchtime I toss with salad greens, a little feta cheese and a splash of balsamic. Sometimes I eat it like a salad and sometimes I stuff it into a pita.

My fave summer salad is a greek: tomatoes, cukes, red onion, red pepper, feta, olive oil, balsamic vinagrette, and olives. Oh, and olive bread. Sometimes I add grilled chicken if I need more oomph.

Not all together, but I like to use: grilled chicken, cucumber, hard boiled eggs, tomatoes, roasted sweet potatoes, green beans, shelled edamame, feta, goat, or blue cheese, roasted red peppers, chic peas, craisins, sliced almonds, mandarin oranges, leftover steak or grilled pork, avocado...

I actually find that I can eat pretty much the same salad over and over again, but I need to change up my dressing regularly. Try that too.

Tomatoes, cucumbers, tons of fresh basil, fresh chives, pepperoncini and red peppers with vinaigrette

To this I add, depending on my mood (and pantry):
avocado
artichoke hearts
hearts of palm
feta
gorgonzola
olives

We cut up multiple vegetables and put them in one airtight contanainer and then cut up a few different types of greens and put those in another airtight container. That way everyone can put the toppings they like on their salad and I don't have to make them everyday. Some favorite toppings:
celery, corn, carrots, radishes, mushrooms, avacado, artichokes, anchovies, pickles
