ISO a Great Crock Pot Recipe

Chicken breat or lean beef... Help! I was looking for a recipe w/ lentils but cant find one. Do you have any yummy recipes for the crocl pot?

I made chicken with enchilada sauce recently--yummy over rice. It is something like:

cut up chicken breasts or thighs
one can diced tomatoes (you can use the kind with green chilis, too)
one can enchilada sauce
1/2 bag of frozen corn or mixed veggies
salt and pepper
1/4 tsp cumin

top with diced green onions, yogurt or sour cream, and shredded cheese. Delish and easy. Kind of like a chicken chili.

I always do corned beef and cabbage in the crock pot.

Corned beef
One head of cabbage (quartered)
one pound baby carrots
as many finger potatoes that will fit.
quarter to half cup of water at the bottom.

where do you get corned beef and how much?

You can get corned beef pretty much anywhere. I get it at Costco, the Co-op, or Shopper's food.

I usually get one brisket, a medium sized one, not sure of even the approx. weight though. I think it is usually between $7-$10 dollars.

Here's one of my family's favorites:
4 chicken breasts, cooked and shredded
2 cans of chicken broth
2 cans of diced tomatoes
1 cup salsa, we used medium
1/3 cup chopped cilantro
1 T cumin powder
2 T melted butter
1 clove garlic
Put the melted butter and the garlic in first and let is "saute" as best you can in a crock pot. Then add the rest of the ingredients. Cook 8-10 hours on low. Serve topped with tortilla chips, monterey jack cheese and sour cream.
