I'm trying to revert back to my 10 year stint of vegetarianism but am a bit stumped now that I have a picky kid and have to feed 4 rather than 1. We eat a lot of brazilian style black beans which 5 yo likes but I think is getting sick of. My little one is far more adventurous but my 5 yo is very sensitive to spice-- Indian food and spicy chili type things do not go over well--she also won't eat potatoes. She's a bit of a "super smeller/taster" and even things that aren't necessarily hot but moderately spiced aggravate her sensitive pallet. At least she can handle onions and garlic.
I have a slow cooker and would love to transition to more stew, bean, whole grain high protein dishes. We also have a vegetable garden and by summer will have an overabundance of kale, okra and greens and I would love to have some great one dish recipes for these. Any websites, cookbooks, or favorite recipes to share? |
| quinoa is a fun and versatile source of protein, if your kids will eat it. add some onion, garlic, chickpeas, misc. veggies, and some herbs. as a bonus, if you can get red quinoa, it looks kind of cool. |
| Tempeh. You can make tempeh fingers by brushing on some sort of marinade or sauce (hoisin, teriyaki, plum sauce, barbecue, cajun seasoning, etc) and baking in the oven. It is a good finger food and also great as a topping for pasta, salad, sandwiches (look up tempeh bacon recipes), etc. |
