Guacamole recipe?

Does anyone have a guac recipe that brings people to their knees? Thanks much. I am thinking the Rosa Mexicana type of heavenly guacamole.

My mom made amazing guacamole, and I do a pretty good job as well. However, we don't write down the recipe, we just throw stuff together.
Roughly...
3 advacados, ripe, mashed.
Juice of 1/2 lemon
1 ripe tomato, diced
1/4 onion (prefer red onion, but white works as well)
2 tablespoons chopped cilantro (I love cilantro and always put in more)
dash + paprika
dash chili pepper
1/4 tsp red pepper

fresh lime juice
sea salt
cilantro
finely chopped onion
and if you want a few diced fresh tomatoes

My Mexican neighbor says the key is to leave the stone in the dip as a decoration and a way to ward off discoloration. I agree with some previous recipes:

*Mash 3 avacodos in a dish
*Chop some red onions
* Add cilantro to taste
*Sea Salt to taste
*Pepper
*Juices of 1 lemon and 1 lime.

I add diced mild chilies and some garlic salt, too.

Cook's Country recipe, hence the fussiness. The lime zest and green onions make it a little different than others and truly the BEST guac I've ever had!

2 thinly sliced scallions , green and white parts separated
1 minced jalapeno pepper
1 small garlic clove , minced
1/4 teaspoon grated lime zest
2 tablespoons fresh lime juice from 1 lime
3 avocados , pitted, peeled, and chopped
3 tablespoons chopped fresh cilantro leaves
Salt

1. Combine white parts of scallions, jalapeño, garlic, and lime juice in large bowl. Let sit for 30 minutes.

2. Add two-thirds of the avocado to bowl with jalapeño mixture and mash with potato masher until smooth. Gently fold remaining avocado into mashed avocado mixture. Gently stir in lime zest, green parts of scallions, and cilantro. Season with salt. Serve.

For the Cooks County poster....how many avocados go into that recipe!?

Rick Bayless has a recipe on the web that uses tomatillos which I like (I think it's basically basically, garlic, lime juice, tomatillos, jalapenos and avocadoes, to taste).

I think Rosa Mexicano uses queso in theirs, but I've never tried doing it that way at home.

3 avocados. They mash up 2 avocados and then dice one for chunkiness. (Ick. I hate the word "chunky".)

I started making guac years ago, and it's always finished. The one ingredient that is different from all the other posts is that I put a dash of olive oil in it, so it is a bit creamy.

Avocados
Cherry tomatoes diced
Lime juice
Olive Oil (or avocado oil) splash
Spring Onions (use green parts as well for color)
Sea salt

I've tried a ton of variations and love Alton Brown's the most. But I do cut back a bit on the amount of onion. Yum!
