easy, vegetarian meal for a new mom?

any one able to point me in the direction of an easy, vegetarian meal that I can make for a friend who just adopted a new baby? I am woefully short on no-meat ideas!

I have made this so many times and it is incredibly easy. You may want to cut out the red pepper if she's nursing. It doesn't say you need to, but I prefer to peel the eggplant before cooking it.

Yum, to the above recipe!

Veggie (bean) chili - you can freeze a big pot of it into small containers so she can take them out and reheat in small portions. I'd also bring rice and cornbread which she could also freeze.

Meatless ziti, lasagna or stuffed shells - also could easily be frozen.

agree with chili or baked pasta w/ veggies dish. or a frittata. very easy, still filling. this is assuming she's vegetarian and not vegan.
vegetable stirfrys are also good.

Not a meal per se, but I would have loved a big bowl of freshly made hummus as a new mom - easy to snack on.

I don't know if I would do a chili. If she's nursing, the baby's system might not be ready to handle the beans (gassy), tomatoes (acidic), spices, and peppers/onions.

this is for a mom who is adopting - so I would not be too concerned about gassey - except for the mom

some other easy veggie meals are:
1. Veggie Pot Pie
2. Couscous - I do it with pecans and apricots served with a salad
3. A summer pasta salad - Basil / Tomotoes / Pine Nuts
