Lemon dessert for Easter

I'd like to make some kind of lemon dessert for Easter. Something springy. What are your favorite recipes?

I like this cake and have made it several times. I used a different glaze recipe though as this one didn't work very well.

Lemon Yogurt Cake
from Fast and Festive Meals for the Jewish Holidays by Marlene Sorosky

2 sticks butter at room temp
1 1/2 c. granulated sugar
4 large eggs separated
1/2 c. fresh lemon juice
8 oz lemon yogurt
2 c. all purpose flour
2 tsp baking powder
3/4 tsp. baking soda
1/2 tsp. salt
2 tsp. grated lemon peel

Grease and flour 12 cup Bundt pan and preheat oven to 350

Cream butter and sugar with electric mixer on high in large bowl until fluffy. Add egg yolks, one at a time, beating well after each. Mix in lemon juice and yogurt. In another bowl, stir together dry ingredients and add to lemon mixture. Mix on low speed until blended.

In a separate bowl, beat egg whites until they hold firm but moist peaks. Fold whites and lemon peel into batter. Spoon into pan. Bake for 50-60 minutes or until toothpick comes out clean. Cool 10 minutes and invert on rack to cool completely.

Glaze
1 c. powdered sugar sifted if lumpy
1/4 c. lemon yogurt
3 tsp. lemon juice
In a medium bolw stir above together. Place cake on rack over baking sheet. Sppon glaze over the top, allowing it to drip over the sides. Let sit at room temp. until firm.

Cake may be stored at room temp overnight, refrigerated up to 2 days or frozen. Serve at room temp.

my aunt's lemon meringue pie. The recipe is from her ancient Betty Crocker cookbook (mid 1960s). Delicious!
