Banana cake

Does anyone have a good banana cake recipe? I'd like to use up my frozen, old bananas and want to make a light-colored cake, not a brown one like banana bread. Is that possible? (Not much baking experience.) TIA.

Not the OP, but what a wonderful recommendation--thanks! After reading the reviews of this cookbook, I'll definitely be ordering it! It's hard to beat southern, small town cooking!

Yes! This is a fabulous recipe that my friend made for my birthday a few years ago. I got the recipe from her and it's now our family birthday cake recipe. Loved by all who have tried it.


Banana Cake with Cream Cheese Icing

2/3 cup butter, softened
1 1/2 cup flour
1 2/3 cup sugar
1 1/4 tsp baking powder
1 tsp baking soda
1 tsp salt
1 1/4 cup mashed bananas (3-4 bananas)
2/3 cup buttermilk (divided) You can mix 3 tsp cider vinegar into 2/3 cup milk to make buttermilk
2 eggs

Mix butter, flour, sugar, baking powder, baking soda and salt in one bowl.
Then add bananas and 1/3 cup buttermilk.

Mix for 2 minutes and then add the other 1/3 cup buttermilk and eggs.

Bake in a 350 degree oven in a greased and floured pan for 50-60 minutes.


Cream Cheese Icing


8 oz. cream cheese, softened
1 stick butter, softened
1 box confectioners sugar
1 tsp vanilla

Mix together.
