Need Last Minute Passover Recipes

Doing the first seder at our house...two toddlers underfoot, trying to come up with a menu...any tried & true recipes?

Here's one, it's for an asparagus and carmelized onion matzah farfel stuffing. You don't have to do it exactly as the recipe specifies. For example, I just microwave the asparagus, and I don't bother to heat the chicken broth before adding to the farfel. And I don't worry about making it at the last minute and serving immediately.
