S/o from the healthy breakfast thread

Ok, just read that thread and realize we need to get the day started with healthier breakfasts at least a couple days a week! (we eat cereal with fruit or frozen wholegrain waffles with fruit, and I did think we were doing pretty well but not after reading that thread!) I would like to try to make healthy pancakes on Sunday, freeze them and eat a few days per week. I found some recipes online that do not use flour at all but oats instead - has anyone tried that kind of a recipe, and if so does it taste really different than pancakes made with flour? Ideally I'm looking for a pancake recipe that is high protein, low sugar/carb, and high fiber, so if anyone has a recipe to share, I'd appreciate it!
