Vegetarian matzoh ball soup for Passover?

Anonymous
Do any of the stores that sell prepared Passover foods (Balducci's, Whole Foods, etc.) offer vegetarian matzoh ball soup? I can start making calls but wondered if anyone had ever looked into this. Thanks!

I dont know about the store-bought stuff, but my friend makes a beautiful butternut squash soup with ricotta matza balls. You can also make a "chicken soup" but without the chicken. Just make a vegetable stock with lots of veggies and use vegetarian chicken consomme to flavor the soup, if you want that authentic taste.

Kosher stores in Maryland are likely to offer prepared Parve versions. They will also offer "chicken flavored" but vegetarian soup base options.

Hey PP, any chance of a recipe there? Sounds great!

And if you don't mind from a box, several of the matza ball soup mixes are vegetarian and I think they're really good.
