Artichoke hearts oil - what to make?

I love the oil that marinates Artichoke hearts. It all gets wasted after we eat the artichokes. Any suggestions for an easy think to make with the leftover oil?

You can use it too sautee vegetables in. I actually use the oil when making a pasta dish to cook the meat or whatever in. Not the healthiest but adds a tremendous amount of flavor.

Make salad dressing with it?

Absolutely salad dressing. Use it as the oil component in a greek salad dressing (mix with lemon and/or red wine vinegar.) Certainly would also be good to use as the oil in a pasta salad.
