Question re: Marinating

We will be going away this weekend, and will be bringing most of our food in a cooler. I want to bring steak to grill - before we go, can I prepare a marinade for the steak, freeze the steak in the marinade, and then thaw and grill when we are at the cabin? The "fine point" of what I am trying to ask is whether putting the steak into the marinade and then immediately freezing it will marinade the steak - or, should I marinade the steak for a few hours and then put it into the freezer for transport to the cabin. Thanks for your advice!

I would marinate it for a few hours and then freeze - that way the meat will absorb the flavor and freeze in.

I think you need to marinate the steak first, then freeze it. Otherwise, If you marinate and then immediately freeze it, the marinade won't sink into the steak.

Another thought is that you could marinate and then immediately freeze the steak, and when you get to your destination defrost the steak overnight in the refrigerator so it will marinate as it defrosts.

to 10:15 - the problem is that it won't marinate as it defrosts - the cells of the steak will be deflating, expelling air rather than letting marinade in.

NP here but this is how I marinate all of my meat when I buy it in bulk. Portion out into ziplocks, add marinade, freeze immediately, thaw in fridge or on counter and the meat does marinade while it thaws.
