| Looking for recipe/meal suggestions for warm nights like last night. We did pasta salad last night and it was perfect. Not hot, pretty light. What are some other good warm weather meals? |

when tomatoes are in season, I like to make some sort of grilled protein (usually chicken or fish) and a large tomato, mozzarella, and basil salad

My favorite is to lay out a bunch of cold foods. Cold chicken, hardboiled eggs, carrot sticks, salad, hummus, toast/bread, and fruit. Add tomatoes and fresh mozzerella when it is in season.
Also - very similar - Cobb Salad or Chef's salad , but have all the trimmings separate for my son. |
| Quinoa, arugula, asparagus and avocado salad - cook and cool the quinoa, steam and cool pieces of the asparagus, then mix all together with a lemon vinegrette. |
| Lettuce wraps: boston/bibb lettuce wrapped around an assortment of vegetables, cooked rice noodles, and marinated skillet-cooked or grilled tofu. Add peanut/satay sauce and you're done! Kids love it. Put topping choices in bowls and let them choose. |

Hiyashi chuuka (my favorite! You can eliminate the traditional ham topping and just do egg, tomato, and cuke)
Goi cuon (or any fresh spring roll) Bun (Vietnamese noodle salad with grilled, marinaded tofu on top) I don't know if you eat fish, but I think grilled fish with a pearl couscous salad (with summer veggies) is a top-notch summer meal. yum, now I'm hungry... |
