Entree for grown-up dinner party w/vegetarians & carnivores?

We are having a grown-up dinner party with 2 people who are strict vegetarians (no fish but will eat dairy), and 3 people who like meat. I can't think of anything to make other than vegetarian lasagna, which I've already made for some of them on a prior occasion. DH suggested make-your-own-pizzas, but I think that's more for a dinner with kids. Any other ideas?

I like your DH's idea - there are lots of "adult" pizza toppings. Another idea is to make a hearty meatless pasta dish - like. Mushroom risotto - and grill flank steak or chicken.

Eggplant parmesan (could do veggie or soy meatballs on the side) or something with polenta?

I agree, eggplant parmesan. Mark Bittman has a fabulous recipe for this in his How to Cook Everything Vegetarian cookbook - it involves broiling the eggplant (no messy breading and frying).

Serve with a sophisticated green salad.

If you grill, kabobs....some with meat some with just veggie. Rice and some other side dish (salad) for all.

I recommended this before for a vegetarian host and she reported back that it was a success: make your own fajitas. marinate and grill chicken or beef and lots of veggies (separately). Serve with guac, sour cream, cheese, salsa, and rice/beans. No veg will feel left out with that, and everyone gets what makes them happy. Kabobs are also a good idea, although I might add some tofu or at least make a more substantive side salad (with legumes)

Cheese and spinach manicotti.

Fajitas work well. If you want it to be "nicer" for the vegetarians (an all) throw in some veggies other than green pepper and onion - red pepper, mushrooms, eggplant, asparagus. Almost any veggies works well (I eat meat, but love a good veggie fajita). Have some black beans on the side to include protein.

Chicken Marbella is the best dish I've ever made for meat-eaters and vegetarians alike. For vegetarians, I use the Quorn Naked Chik'n Cutlets instead of chicken breasts:

I don't know if this is too informal, but you could make a meal of tapas or mezzes - a few cold for the first course, and 3-4 warm for the second course. That way, you can make some veggie and some w/ meat or fish.

You could do two types of chilli (veggie, meat) with cornbread, salad.

Enchiladas or taco bar with mexican rice.
