food safety - leftover risotto

I have leftover risotto from Tuesday night. I am thinking of turning it into arancini (today Friday). It was made with chicken broth, peas, asparagus. Is it still good? (searched around online and consulted a home keeping book. I am still not sure).

I think it's fine. It wouldn't go bad in 3 days.

I think it's fine. I would eat it for up to 5 days. It's refrigerated so what's the problem? Go for it.

Assuming it was refrigerated -- no problem!

For future reference -- the USDA says you can keep leftovers 4 days in the fridge.

Yep, it's fine. It's risotto -- and if you're making arancini, you're recooking it, even. Enjoy!

Op here. Thanks so much for the link and to everyone else for weighing in. The arancini were fantastic. I used Giada's recipe here, if anyone is interested (though I used a different recipe for the risotto).
