What to do with hummus?

Anonymous
I have a two HUGE containers of hummus in my fridge, one opened. What can I make with all of this? Does hummus go bad? I couldn't find the date on the package. I tried to look for hummus recipes and just get things on how to make hummus, need a recipe on a 'meal' with hummus in it. Please share your ideas!!

Forgot to mention, I am just tired of constant sandwiches and of dipping chips. I would love something like a pie etc. but couldn't find recipes. Any ideas? TIA.

You might be able to use it to thicken a stew, never tried it, but might work. It's just chick peas, so where else would you use a chick pea?

I've only ever had it on a sandwich or crackers, sorry I'm not more help

I wonder if you could bake it and turn it into some kind of chip/cracker itself? Or use it in a homemade cracker recipe?

To be honest, the only thing I can think of is that I do add humus to regular, mixed salads (just one more thing in there adding flavor). When I make a salad bar salad of mixed greens, pasta, and usually some dressed fancy salad item (like some asian green bean salad), I'll throw in hummus to mix in with the other dressings. But that's all I am coming up with.

How about using it on a pita pizza - you could split a wheat tortilla, spread hummus on each half and top with roasted peppers and olives, sprinkle feta cheese on top and put under the broiler.

I saw this recipe on the Washington Post site the other day - thought it looked good. http://projects.washingtonpost.com/recipes/2011/03/16/paprika-chicken-hummus/

I use it as an exfoliating facial mask and also as a heel softener. If you have an unusually high forehead you could go through that amount in week.

Love it with carrots and bell pepper slice. A healthier alternative to chips.

It makes great ear plugs - useful if you have noisy neighbors. Best part is, when you wake up in the morning - instant breakfast!

I've seen soup recipes (lentil and chickpea) that call for stirring in some humus to thicken it up.
