Hello,
I tried and made cupcakes for the first time last night in preparation for my DD's birthday in two weeks.... I used the Magnolia recipe that I found here in the archives in this thread: http://www.dcurbanmom.com/jforum/posts/list/78182.page#591395 The dough/cake itself turned out amazingly. I am definitely going to follow this exact recipe for the birthday. However, the buttercream icing was not a hit with my husband and myself.... I guess it was to buttery... Does anyone have ideas for a different icing I could make? Something simple and white (I plan on adding food coloring to do several colors) I always find the best ides/advice here! TIA |
| I'm a big fan of cream cheese icing. I don't have a favorite recipe, but it should be easy to get one online. |
| Half melted white chocolate or chocolate chips, half sour cream. Can add vanilla or other extract. |

| Definitely go with cream cheese icing if you don't like buttercream. Very easy to make, and easy to find recipes online. |

If you want it like Georgetown Cupscake use an egg white recipe(buy the pasteurized eggs whites at safeway and make sure the butter is room temperature) it is easy

LOL! I was going to say if you want it like Georgetown cupcake, use a cream cheese frosting! That's what they use on their chocolate cupcakes with vanilla frosting, the ones that have those little flakes of chocolate on top. I used to make buttercream frosting until I ate those, and then I converted to cream cheese b/c it's not as sweet. |
| I'd beware of the chocolate ganache. It can be quite tricky to make. I do quite a lot of baking but I've had a few ganache disasters. IMO a cream cheese icing is the easiest and the tastiest, and is very popular with children. |
I like cream cheese frosting, but I disagree that ganache is tricky. Just don't overheat! |

Best cupcake frosting...be sure to beat it for a loooong time (4-8 minutes it says, I usually do 6 minutes).
Cook's Illustrated: Quick & Rich Vanilla Frosting 2 tablespoons heavy cream 1 teaspoon vanilla extract Pinch table salt 2 1/2 sticks unsalted butter, softened 2 1/2 cups confectioners' sugar Stir the cream, vanilla, and salt together in a small bowl until the salt dissolves. Beat the butter with an electric mixer on medium-high speed until smooth, 30 to 60 seconds. Reduce the speed to medium-low, slowly add the confectioners' sugar, and beat until smooth, 2 to 5 minutes. Beat in the cream mixture. Increase the speed to medium-high and beat until the mixture is light and fluffy, 4 to 8 minutes. |
