warm but not carribean resort destination for late May/early June?

I would like to go away with DH and 2YO DS in late May or early June. That's probably too early for Bethany or the like, but it is too late to go to the carribean (I dont do well with high heat in the tropics). Ideal temp for me is high 70s bordeirng 80 - which probably rules out south Florida at that time of year too. Direct flight or short drive is a must, so outer banks are out. Is it cooler in northern Florida or the gulf coast? What about Hilton Head? Other suggestions? We'd consider a non-beach destination too as long as the weather was warm and the resort had good pools, etc. TIA!

Las Vegas. Warm, dry. Nice places to stay. Nice pools. Non-stop flight.

OP here - no, not into golf. Looks nice, but I should also add that ideally we'll get either a suite or - even better - a condo or villa with small kitchen, all without breaking the bank.

Kiawah -- but get a "villa" in the older section of the island. They have little cottages or townhouse-style places to stay. Not as fancy as the Sanctuary, but great if you have kids. We have gone on memorial day weekend and the water is warm, the beach is incredible (gentle waves). We love it there at that time of year.

The villas are in neighborhoods with pools. They aren't huge, but you can usually walk right to them, great for little kids or just taking a break from the beach. We reserved villas through Pam Harrington Exclusives in the past and they are always clear about whether there is a neighborhood pool available or not. If you reserve through the resort itself you can get privileges to the big, main pool, but you don't get as much say in exactly which place you stay.

I realize Bethany may not be what you are looking for but since you mentioned it...my family actually goes there every year around Memorial Day and there is only one year I can remember that the weather was not beautiful!

How about Myrtle Beach? It's only a 7 hour drive (or is that too long?). Maybe Virginia Beach?

Amelia Island is also great. Might want to fly into Jacksonville and rent a car.
