Tex-mex dinner for 20?

What should it include?

Here's what I have so far:
taco salad
chili
make your own taco bar - including chicken, beef, and beans and hard and soft shell tacos
yellow rice

I still need a veggie side and a dessert. Any recommendations?

If you want to stay with the theme, could have a tres leche cake, but ice cream and fruit would be nice too - could have dulce de leche for a topping.

Dulce de leche ice cream or churros and hot chocolate would be nice for dessert.

Make a tres leches cake- can be made a day or two in advance since it is a sponge cake. Here is my fav recipe:

I'd get the fire roasted corn from Trader Joe's for the veggie.

I did this once and it was a huge hit. Make sure you have all the fixings..cheese, sour cream, corn, black beans maybe. Also an easy guac that is actually good is the one using the packet that is next to the avacados. Make sure it is the black packet..not the white one. I don't know the brands but the one that is mostly black is good (I got lots of shocked guests saying "that was from a packet"). The white packet is not good at all.

I made green and red enchiladas for a big party once -- it was a big hit, kind of like lasagna for a big crowd.

Good for you for cooking... I would have ordered from Rio Grande! They do have delicious guacamole, salsa and chips you can order in large quantities as a starter.

Might repeat too many of the ingredients you already plan but I have always had great success with my "Walking Taco" -- it's essentially a layered dip. In a large casserole dish, lawyers go like this (from top to bottom): 1. refried beans; 2. mashed avocado; 3. sour cream mixed with taco seasoning; 4. shredded cheese; 5. diced tomatoes and onion; 6. sliced canned olives. Serve with sturdy tortilla chips, strips or those little cups.

Dessert ideas: a couple of flans with different flavors -- amaretto, classic, etc. Or if you wanted to do something different, a watermelon and jicama salad drizzled with a simple sugar syrup.

Yellow rice has sazon in it to give it taste and the yellow color. Slightly different than Spanish rice.

For dessert I would make flan (custard dessert). They are really easy to make and so good!

For veggies you can saute some pepper & onions, fajita style.

I would also make a fresh tomato pico - tomatoes, cilantro, onion, garlic salt, tomatillos & jalepenos. I combine some of this with avocados for my guac.
