vegetarian main for a crowd

We're vegetarians and having a group 10+ over this weekend for a casual dinner (not eating at the table). I have been so overwhelmed with work and the flu that I can't begin to think of a good main dish to make except for lasagna. I know people love lasagna, but it just seems lame to me to make it, probably because whenever my mom makes dinner for more than 5 people it's lasagna. Any suggestions?

tacos or fajitas - assemble yourself, lots of veggie and bean fillings, cheese, guac, salsa, sour cream, a side of spanish rice. If it doesn't offend you and someone offers to bring something, you could always suggest they bring grilled chicken to include, but most folks would be happy without it.

I think that lasagna is a fine choice, especially if it's homemade. I also think that fajitas would be fun. You could also do chili.

The eggplant is broiled, so you don't have the mess of breading, frying, etc., and the effect is lighter than regular eggplant parm.

I just made chili yesterday (DH's fav and it makes a ton), add a few sides and you're gtg! I used 3 large cans of beans (from MOM's, one each of pinto, black, and kidney), 2 cans of Muir Glen's fire roasted tomatoes and garlic, and one large Muir Glen can of chunky tomato sauce. I sauteed one onion and added that in this time, along with a bunch of spices (salt, pepper, chili powder, all season, and something I can't remember). Put in a crock pot on low for 8 hours. Half way through you can add your favorite meat substitute crumble if you want.

This chili sounds good, but I have a question. Why does this need to get cooked for 8 hours? Everything is already cooked. Seems to me tht at most you would want it to simmer together on the stove for an hour? Or is this the use of the slow-cooker to have ithot and ready when you get home from work? I make a similar chili, but with dried beans, so they need to cook for a while. Just curious...

Initially it was for convenience after work, but tried it over the stove, and the longer the flavors have to simmer together, the better it tastes!

OP here - I went with a fajita bar and it was a big hit. It was also pretty easy because I did all the prep the night before and just sauteed the veggies while talking to guests in the kitchen. I did them in batches and put the cooked ones on a cookie sheet in a hot oven and then mixed it all together in the serving dish, turned out great! I made a bean and corn salad on the side with chips, salsa and guac. This was by far the easiest group meal I've ever done, yet it was fun and everyone really liked it.

Yay! I'm happy that everyone enjoyed it, especially you. Dinner parties are so much more fun when you're not stressed about the food.
