Hi all,
my family has several members who are gluten-free, and I want to try to find some vegetarians dishes. I personally don't do well with beans, but assume the gluten-free veggie recipies are likely to be bean-oriented. Suggestions please, w/ or w/o beans? |

| I would use rice, corn and quinoa as staples then. Check out The Glutten Free Goddess website - she has lots of vegetarian GF recipes. |

Gluten free pasta with any vegetarian sauce or gluten free lasagne Veggie enchiladas made with corn tortillas and cheese Tofu vegetable stir fry with rice Potato gratin Fritatta Southern cornbread (an all cornmeal recipe) with veggie chili or soup and salad |

Not all recipes are vegetarian, but she includes a number of them: black bean, corn & yellow rice enchiladas with guacamole & red chile sauce, asparagus risotto casserole, butternut squash rice bake with toasted hazelnut-sage crunch, portobello rice quiche, pumpkin dumplings with radicchio, gluten free pastas with sun-dried tomato sauce or walnut "cream" sauce, hummus sandwiches, grilled vegetable pesto pizza, etc. Her breakfasts (S'mores pancakes, cinnamon toast waffles and more) are amazing as well. |
