What to do with a 7-lb whole chicken?

Any ideas? Something simple and tasty - suggestions for left-overs are also appreciated. Thanks!

Melt half a stick of butter, add crushed garlic, salt, pepper and a bunch of herbs. Brush over the chicken, bake, and baste occasionally. Delicious.

Take that big chicken and make a pot of chicken stock - the uses are endless. Use some of the stock right away and freeze the rest in 1 or 2 cup containers. You can use the cooked chicken meat for any number of things - chicken salad, pot pie, you name it.

OP here - thanks for the suggestions. I am roasting it - but I guess I was more wondering if anyone had any ideas of things to make with the leftover chicken meat. I know my husband and I won't be able to eat all of the meat. We have previously used it for tacos, tostadas,other and chicken salad - does anyone have any other yummy recipes to share for using the leftover chicken meat? TIA!

I like to make chicken divan, because it's such a different flavor. Don't have a recipe handy, but you could google one.

My wife loves this for left over chicken

Traditional Mexican Chicken Enchiladas Recipe
Ingredients
tortillas (I make them, but sometimes buy larger one at safeway)
3 cooked chicken no bones or skin, shredded
½ cup chopped green onions
½ cup chopped fresh cilantro
2 cups chicken broth
1 cup sour cream
¾ cup minced onion
12 oz shredded cheddar cheese
4 oz chopped green chilies(buy in can)
¼ cup butter
¼ cup all purpose flour

Divide the chicken, onion (not green onion) and 10 oz of
the cheese between the tortillas.( You can add pre cooked rice, corn, chopped pepper and/or black beans too) Roll them up and place in a greased baking pan, seam side down.
Melt the butter in a pan over a medium heat. Add the flour and whisk until it begins to boil and turn light brown. Add the broth, stirring continuously.
Add the chilies and sour cream. Stir occasionally and do notlet the mixture boil. Pour this mixture over the enchiladas when hot and thick. Bake enchiladas
for 20 minutes then top with the rest of the cheese and
bake for a further 5 minutes. Use the green onions and
cilantro to garnish them.

Just use the leftover meat from your roasted chicken instead of cooking the 4 chicken breasts.

(you can use the same preparation and roast it instead of grilling)

Same recipe has lots of suggestions for the left over chicken. I like the curried chicken salad with apples.

Also, I also like to use leftover roast chicken in Caesar Salad, another great recipe here from Cooking Light http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=10000000222410 (a light dressing which tastes like real Caesar).

You or your butcher could cut it up and freeze the chicken parts to use at different times.
