I just took cut up chicken, without the skin, and put a whole bunch of herbs and spices on it. I drizzled a little olive oil and then poured some chickne broth on top. I am serving this dish tomorrow. Should I cover it when I cook it and at what temperature? I just dont want it to be dried out since I am making it in advance.

Chicken in advance? Are you serving it cold or will you reheat it?
Do not cover, bake at about 375-400 for about 45 min or if you have a digital thermometer stick it in the largest breast and remove it from the over around 160 degrees, it will still cook to 165-170 and be very moist. |
