I have a jar of really good walnut pesto and was thinking of using is for some sort of appetizer for an upcoming party. Anyone have any suggestions for that, or what I might do with it?
Toast thin baguette slices, spread some pesto on it and top with finely chopped tomatoes (or halved grape tomatoes) and maybe a sprinkle of parm. If you put parm on top, warm in the oven until the cheese melts a little.
Thaw a sheet of frozen puff pastry in the fridge... spread the pesto on the pastry, roll it up in a jelly-roll fashion, slice it into 1/2 inch slices making little pinwheels, spread pinwheels on parchment lined baking sheet and bake. Sooo good with basil pesto. Has to be the same with walnut pesto. You could also sprinkle chopped sun dried tomatoes or shredded cheese over the pesto before rolling
