Why is the "Use Within # Days of Opening" timeframe so tight for jarred pasta sauce?

I'm the fuzzy sauce poster...is it wrong that we have a bowl of Halloween (and X-mas and V'day and Easter) candy in our kitchen? Perhaps I need to reevaluate my storage M.O.!!

I have often wondered about this. Rao's sauce doesn't say anything on the label about how long it keeps. My rule is 1 week, and nothing bad has every happened to us.

Another option is to freeze anything that's left, but I always forget about that I have it, and it ends up going to waste anyway.

I have noticed that jars of tomato sauce grow fuzz surprisingly quickly. I make sure to use it within 3-4 days. The thing about "fuzz" is that by the time you see it....
