Have made tons of chili over the years and my all-time favorite chili recipe is Tom Valenti's Texas style chili from his "Soups, Stews, and One Pot Meals" cookbook. It's out of this world. Best chili I've ever had.

Chopped red onions on top, and sometimes a little sour cream - also fantastic with this. It's even better the next day. Great for a big party too - I've served a huge pot of this with cornbread and salad. Easy but delicious. |
the only difference is you should soak the dried beans for a day or two ahead of time, or plan on cooking it a LOT longer, or use a pressure cooker. everything else should stay the same. i'm of the belief that you really don't need a recipe to make chili as long as you include chipotles in adobo sauce (buy it in a small can) and, if you have it, about a half a can of beer. besides that, any combo of bell/hot peppers, onions, garlic, ground meat, canned tomatoes, and beans will work, on the stove or in a crockpot. |
