Went to tour gym - why did they ask to copy my driver license?

It is way more likely that gyms, and other businesses push hard for as much ID on customers as they can so that they can store and sell as much data on people as they can. This is a dystopian era we have entered with big data pushing hard to hoover up as much of our personal details as they can, without our permission. The dossier society does absolutely nothing to make us safe but it does give immense unelected and therefore undeserved, unearned power to big corporate and the super rich. The only way this will stop is by forcing our elected legislators to ban the practice of every entity we do business with demanding our ID, and locking up any business leader, employee, or other personnel who don't obey for at least ten years on a first offense, from the CEO on down.

Medical places always want to scan or copy my ID. I always decline and they always agree that all they really need is to see my DL and note my DL# and Expiration.

Good thing I'm fat and never joined the gym.
