Best Thanksgiving side dishes

Second the request for a good corn pudding recipe. Ive made the one from "Joy of Cooking," and it was terrible! Too much baking powder and the whole thing left an awful metallic aftertaste in my mouth.

This is the corn pudding recipe I use:

CORN PUDDING

2 15 3/4oz cans cream style corn, NOT drained
1 box Jiffy Cornbread mix
2 eggs (you could use egg beaters)
2/3 C milk (use skim/no fat)
1/2 C cooking oil
1 dash garlic salt

Mix together and pour in to a greased 9X12 baking pan and bake at 350 for 45 minutes (my note: it can take an hour).

My kids love it and it takes all of 3 minutes to throw together.

I'm a vegetarian, so Thanksgiving is all about the sides for me! I have made this cornbread stuffing many times and love it:

It's particularly good with some fresh cranberry relish on top!

I had never tried traditional green bean casserole before and was intrigued, so we made some last year from Cook's Illustrated's recipe (available online, but subscription required: http://www.epicurious.com/recipes/food/views/Southwest-Corn-Bread-Stuffing-with-Corn-and-Green-Chilies-105807) and really liked it, but it's incredibly rich. (I swapped mushroom broth for chicken broth.)

Re the corn pudding recipes: It seems like there's a wide range of what people consider to be "corn pudding." For me, I prefer more of a breadiness, which I guess would be closer to a spoonbread than an actual custardy pudding. So I like the ones like the Jiffy corn mix one that incorporates flour and corn meal. The ones with a lot of eggs and milk/cream are more custardy.

That is a good point, I think I am going to try the spoonbread type one, I am hoping it will be similar to that mushy cornbread side you get at some Mexican restaurants. I could eat a whole bowl of that stuff, I know I am weird

Sweet potato crunch. Criminally delicious. Basically desert masquerading as a side:

3 cups sweet potatoes (about 4 good sized ones)

½ cup sugar
½ cup butter
2 eggs, beaten
1 teaspoon vanilla
1/3 cup milk

Topping:
1/3 cup melted butter
1 cup lt. brown sugar
½ cup flour
1 cup chopped pecans

Boil and mash potatoes. Mix in sugar, butter, eggs, vanilla and milk. Put in 3 x 9 in. baking dish.

Topping:
Melt butter and mix in remaining ingredients. Sprinkle on top of potato mixture. Bake 25 minutes at 350 degrees.

Serves 10 to 12

Last year I tried the green beans and kale from the Oprah magazine - it was the first time I cooked the whole meal and I was not making that damned Durkee green bean casserole that my husband grew up with - and it was surprisingly good. People asked for the recipe.

Can I just say I love you. I made this and it is exactly the stuff I remember from a restaurant when I was a kid. I loved it and so did everyone else at dinner, so easy, now to stop myself from eating the entire bowl of leftovers

Can I just say I love you. I made this and it is exactly the stuff I remember from a restaurant when I was a kid. I loved it and so did everyone else at dinner, so easy, now to stop myself from eating the entire bowl of leftovers


Oh, I'm glad it worked out! We made it too (we traveled this year and made it in my sister's kitchen - they had never had it) and it was a huge hit. I love how ridiculously easy and popular this is!

For what it's worth, we skip the garlic salt.
