| You could do panna cotta rather than creme brulee, and that way you don't need a blow torch. Panna cotta is a great make ahead dish - and you could fancy it up with a few slices of poached pears, which are also make ahead. |
| I was also going to suggest panna cotta - it is so easy and a bit lighter than creme brulee. Plus you can make it a day ahead. I would serve with a seasonal fruit compote. |

Search epicurious.com for flourless chocolate cake recipes. DH makes these in ramekins as dinner party desserts - he swears they're very easy, and they're always a huge hit. The trick is (1) use a really high-end chocolate in the receipe and (2) whip your own fresh whipped cream as a garnish. Very rich, big wow factor, but very easy.
