DH’s adopted niece believes God dropped her from the sky and her parents found her in/next to a bush

OP, leave it alone. And, she is DH niece, not adopted niece. Adoption is how she joined your family, it should define her place in the family. You are right, but parents are probably not fully comfortable with the adoption vs. biological child.

My 8 year old has been talking about it for a few years. He talks about his birth mom and grandparents, whom we are very close to.

I have an 8 year old who was adopted. If I were you, I'd mention it to the mom. Kids can say some wild things - both intentionally and unintentionally. The mom probably wants to follow up with the kid, just to make sure that everything is clear.

This. I bet her parents said something like, "you were a gift from God", and your niece came up with this story on her own. Do your SIL a favor and tell her. You don't want kids at school laughing at your niece's story.
